Zucchini sandwiches are a truly crazy recipe, the most widespread vegetable “sandwiches” on the internet. After potato sandwiches and pumpkin sandwiches, I had to make them with zucchini, which is one of my favourite vegetables. These zucchini sandwiches are quick, clever, super delicious, and not too high in calories – they’re guaranteed to be a hit, and even the little ones will love them. You can fill them with your favourite filling; I used cream cheese. They’re perfect for a quick and nutritious meal. As a dinner/lunch saver or even as a snack, they’re soft and have a creamy filling. You can also prepare them in the air fryer; they’re truly fabulous!
Ingredients:
- 200g (7 oz) Scamorza (smoked mozzarella)\
- 100g (3.5 oz) Turkey breast\
- 100g (3.5 oz) Cream cheese (e.g., Philadelphia)\
- 2 Zucchini\
- Rocket (arugula) (to taste)\
- Extra virgin olive oil (to taste)\
- Salt (to taste)
How to prepare Zucchini Sandwiches:
- Zucchini sandwiches are very easy and quick to prepare. First, slice the zucchini into very thin slices (about 3 mm or 1/8 inch), use a knife if you don’t have a mandoline with adjustable thickness; with the classic mandoline, they would be too thin. On a non-stick (or parchment-lined) baking sheet, arrange the zucchini slices into two rectangles (I used 30 slices for each rectangle), brush them with a little extra virgin olive oil and salt, then place the grated Scamorza cheese on the zucchini.
- Bake the zucchini sandwiches in a preheated oven at 200°C (400°F) for about 20 minutes; they should be golden brown. Let the zucchini sandwiches cool, turn them over and fill them with cream cheese, turkey meat, and rocket, then close them in the middle, and they’re ready to eat!
Tips:
- The filled zucchini sandwiches will keep in the refrigerator for one day. Instead of Scamorza cheese, you can also use Provola cheese, but not mozzarella as it would be too watery.
- You can also bake the sandwiches in the air fryer for 15 minutes, also at 200°C (400°F).
- You can make the sandwiches smaller or larger by putting in fewer or more zucchini slices.
