How to prepare Vegetable Omelette:
- Preparing the vegetables: First, add some olive oil to a non-stick pan and heat over medium heat. Add the sliced leek and sauté for a few minutes, stirring occasionally.
- When the leek begins to soften, add the diced bell peppers and sliced zucchini. Mix everything together and season with salt, pepper, and Italian herbs. Continue cooking for about 5-7 minutes until the vegetables have softened slightly.
