Tiramisu Crêpes : The Perfect Dessert for Gourmets

This famous Tiramisu Crêpes dessert drives everyone crazy. Soft and creamy until the last bite, it’s a delicious variant of the world’s most popular dessert, tiramisu. Preparation at home, especially with the help of a Thermomix, is very simple.

Ingredients for Crêpes:

  • 100 g (¾ cup) all-purpose flour
  • 250 ml (1 cup) milk
  • 20 g (¼ cup) unsweetened cocoa powder
  • 2 eggs
  • 25 ml (1.5 tbsp) extra virgin olive oil
  • Butter (for frying)
  • Coffee (for drizzling)
  • Unsweetened cocoa powder (for dusting)

Ingredients for Filling:

  • 80 g (⅓ cup) sugar
  • 1 egg yolk
  • 500 g (2¼ cups) mascarpone
  • 2 whole eggs

How to make Tiramisu Crêpes:

Preparing the Crêpes with Thermomix:

  1. Add all ingredients to the Thermomix bowl, mix for 1 minute at speed 5.
  2. Pour the mixture into a bowl and let it rest in the refrigerator for 30 minutes.
  3. Grease a pan with butter, pour a ladle of the mixture into the pan and swirl to cover the bottom.
  4. Remove from heat when it starts to bubble, flip to the other side, and cook for a total of 2 minutes.

Preparing the Cream:

  1. Pour sugar into the Thermomix bowl, mix for 29 seconds at speed 10.
  2. Insert the butterfly whisk, add eggs and egg yolk, mix for 15 minutes at 80°C (176°F), speed 3.
  3. Let cool with the lid on, then mix for 2 minutes at speed 3.
  4. Remove the butterfly whisk and gradually add mascarpone through the hole in the lid, mixing at speed 1.5 for about 2 minutes.
  5. Pour the cream into a bowl.

Preparing the Mascarpone:

  1. Insert the butterfly whisk, add eggs, egg yolk, and sugar, mix for 6 minutes at speed 4.
  2. Remove the butterfly whisk, add mascarpone, mix for 2 minutes at speed 3.

Assembling the Crêpes:

  1. Brush the surface of each crêpe with coffee.
  2. Spread the cream on top.
  3. Sprinkle with cocoa powder.
  4. Fold into a triangle shape.
  5. Arrange all crêpes on a platter and dust with cocoa powder.
