Thanks to their ability to absorb liquid, the seeds develop a thick and creamy consistency, making this pudding a very satisfying food that is also rich in fibre, omega-3 fatty acids, and antioxidants.
Ingredients for 1 serving:
- 20g (2 tablespoons) chia seeds
- 125g (1/2 cup) low-fat yogurt (or plant-based yogurt)
- 150g (1 cup) strawberries
- A few drops of maple syrup
How to prepare Strawberry Chia Pudding with Yogurt:
- Begin preparing the yogurt-strawberry chia pudding the evening before: The chia seeds need to rest overnight to achieve the right consistency. Mix the low-fat yogurt and chia seeds in a glass container.
- Cover the container and place it in the refrigerator. By the next morning, the seeds will have absorbed the liquid, creating a thick pudding-like consistency.
- Wash the strawberries, pat them dry, remove the stems, and cut them into small pieces.
- Place about half of the chia seed pudding in a bowl and spread it evenly on the bottom. Cover with about half of the chopped strawberries and sweeten with a few drops of maple syrup.
- Now spread the remaining pudding over the strawberries and finish with a final layer of chopped strawberries. Finally, drizzle a few more drops of maple syrup over the strawberries.
- Enjoy the Strawberry Yogurt Chia Pudding immediately. These quantities will give you a nice portion of chia seed pudding suitable for breakfast. However, if you want to have it as a mid-morning or afternoon snack, I recommend halving the dose.
