This basic spinach crepe recipe is perfect for filling with your favorite ingredients! Spinach crepes are incredibly easy to make—just whisk together the batter ingredients, and you don’t even need to cook the spinach beforehand!
You can fill these crepes with almost anything. Spinach pairs well with a variety of ingredients, so feel free to get creative. For example, try filling them with ham and cheese (a green twist on a classic), provola and Grana Padano cheese, smoked salmon and cream cheese, or even walnuts and Gorgonzola. The choice is yours!
Ingredients:
makes 8 crepes:
- 200 g (7 oz) fresh spinach
- 200 ml (¾ cup) milk
- 150 g (1 cup + 2 tbsp) all-purpose flour
- 1 large egg (or 2 small eggs)
- Butter, as needed
- Salt, to taste
How to Make Spinach Crepes
- Wash the spinach thoroughly and place it in a blender or food processor.
- Add the egg and milk, followed by the salt and flour. Blend until you have a smooth, lump-free batter.
- Melt a small amount of butter in a 20 cm (8-inch) non-stick pan over medium heat.
Pour a small ladleful of the spinach batter into the center of the pan. - Quickly tilt and swirl the pan to spread the batter evenly, coating the bottom.
- Cook for 2-3 minutes on one side, then flip and cook for another 1-2 minutes on the other side.
- Transfer the cooked crepe to a plate and repeat the process with the remaining batter, adding more butter to the pan as needed.
- Once all the crepes are cooked, they’re ready to be filled with your favorite ingredients!
