Quinoa Veggie Burger: Super Easy & Delicious Vegetarian Recipe

If you want to keep your diet light yet tasty, quinoa veggie burgers are the perfect choice. They are easy to prepare, light and delicious and can be stored in an airtight container in the fridge for 2-3 days. But you can also modify it with your favorite vegetables.

Ingredients for 6 people:

  • 3 zucchinis
  • 2 potatoes
  • 1 carrot
  • 400 g quinoa
  • Chopped parsley (to taste)
  • Pepper (to taste)
  • Salt (to taste)

How to make quinoa veggie burgers:

1. Prepare the quinoa:

  1. First, wash the quinoa thoroughly under cold water to remove any impurities.
  2. Place the quinoa in a fine-mesh sieve and allow to drain completely.
  3. Place the water and quinoa in a saucepan. Cook over a medium heat until the quinoa has absorbed all the water.
  4. Remove from the heat, cover the pan and leave to cool slightly.

2. Prepare the vegetables:

  1. Clean and dice the carrots, potatoes and zucchinis.
  2. Place the vegetables in a pan of water and season with salt. Cook until soft.
  3. Once cooked, drain the vegetables and place in a bowl.
  4. Mash the vegetables with a fork until they are pureed.

3. Combine the ingredients:

  1. Mix the cooked quinoa into the vegetable puree.
  2. Sprinkle with chopped parsley, season with salt and pepper and mix well with your hands until the ingredients are combined.
  3. Form burgers with your hands and shape as desired.

4. Cook:

  1. Heat a frying pan with a little oil.
  2. Fry the patties for about 2 minutes on each side until golden brown and crispy.
  3. Serve hot after frying.
  4. These burgers are perfect as a main course or as a side dish with a fresh salad.
