Pasta del Bandito is a delicious first course that can be prepared simply and quickly.
A rustic, peasant dish made with simple ingredients that you almost always have in your pantry or refrigerator. It can be prepared in a few minutes and is rich in flavor and hearty, perfect for a family lunch or dinner.
Ingredients:
- 320g (11 oz) pasta
- 150g (5 oz) pancetta (mildly smoked belly bacon)
- 400g (14 oz) tomato passata
- 2 eggs
- 1 onion
- Grated Parmesan cheese
- Extra virgin olive oil
- Salt
- Pepper
How to prepare Pasta del Bandito:
- Cut the bacon into cubes.
- Chop the onion.
- In a large pan or wok, heat some extra virgin olive oil and sauté the onion.
- Add the bacon cubes and brown on all sides, then add the tomato puree and cook over medium heat for a quarter of an hour, seasoning with salt and pepper, stirring occasionally.
- Meanwhile, cook the pasta al dente in plenty of boiling salted water.
- In a small bowl, beat the eggs with a pinch of salt, add 50g (1/2 cup) grated Parmesan cheese and beat again.
- Drain the pasta, reserving some of the cooking water, and add it to the pan with the sauce with the heat turned off.
- Stir thoroughly and add the egg mixture, continuing to stir, adding some of the reserved cooking water if needed.
- Serve the Bandit’s Pasta immediately, sprinkling with a little pepper or grated cheese if desired.
