Pasta del Bandito, Older than Carbonara

Pasta del Bandito is a delicious first course that can be prepared simply and quickly.

A rustic, peasant dish made with simple ingredients that you almost always have in your pantry or refrigerator. It can be prepared in a few minutes and is rich in flavor and hearty, perfect for a family lunch or dinner.

Ingredients:

  • 320g (11 oz) pasta
  • 150g (5 oz) pancetta (mildly smoked belly bacon)
  • 400g (14 oz) tomato passata
  • 2 eggs
  • 1 onion
  • Grated Parmesan cheese
  • Extra virgin olive oil
  • Salt
  • Pepper

How to prepare Pasta del Bandito:

  1. Cut the bacon into cubes.
  2. Chop the onion.
  3. In a large pan or wok, heat some extra virgin olive oil and sauté the onion.
  4. Add the bacon cubes and brown on all sides, then add the tomato puree and cook over medium heat for a quarter of an hour, seasoning with salt and pepper, stirring occasionally.
  5. Meanwhile, cook the pasta al dente in plenty of boiling salted water.
  6. In a small bowl, beat the eggs with a pinch of salt, add 50g (1/2 cup) grated Parmesan cheese and beat again.
  7. Drain the pasta, reserving some of the cooking water, and add it to the pan with the sauce with the heat turned off.
  8. Stir thoroughly and add the egg mixture, continuing to stir, adding some of the reserved cooking water if needed.
  9. Serve the Bandit’s Pasta immediately, sprinkling with a little pepper or grated cheese if desired.
