Pan-Fried Broccoli Tortino is a tasty recipe for a savoury main course. I had pre-cooked broccoli and wanted to transform it into something appetizing, rather than simply seasoning it and serving it as a side dish.
Ingredients:
- 600g (21 oz) Romanesco broccoli (already pre-cooked)
- 1 egg
- 20g (1 oz) grated Parmesan cheese
- 1 tablespoon chopped parsley
- 40g (1.5 oz) flour
- 40g (1.5 oz) cooked ham (or raw ham like Prosciutto crudo)
- 3 slices of processed cheese
- Salt (to taste)
- Nutmeg (to taste)
- Breadcrumbs (as needed)
- Extra virgin olive oil (as needed)
How to prepare Pan-Fried Broccoli Tortino:
- Mash the broccoli with a fork until it’s almost a cream. Add the egg, Parmesan cheese, salt (if you haven’t already salted the broccoli during cooking), parsley, grated nutmeg, and flour. Mix well.
- Add a drop of oil to a non-stick pan, sprinkle with some breadcrumbs, and spread half of the broccoli mixture on top. Distribute well using the back of a spoon.
- Place the ham and processed cheese on top. Cover with the remaining mixture, press down well with a spoon, and try to seal the edges properly.
- Place on the stove and cook, occasionally shaking the pan gently. When the bottom of the tortino is golden brown and a crust has formed, flip it over using a large plate and slide it back into the pan. Continue cooking until the underside is cooked through.
