The Giraffe Cake is a simple, delicious, and visually striking dessert. Its name comes from the alternating layers of batter sprinkled with bitter cocoa, creating a unique pattern. I’ve been wanting to try this recipe for a while and finally decided to give it a go today. I must say, I was pleasantly surprised!
I followed the original recipe with a few modifications: I added some milk to the egg yolk mixture to achieve a perfect consistency, and I doubled the amount of bitter cocoa for a more intense color and flavor contrast.
Ingredients:
For the yellow batter:
- 5 egg yolks (medium eggs)
- 1/2 cup (100g) sugar
- 1/4 cup (50g) peanut oil
- 1/3 cup (80g) milk
- 1 1/4 cups (150g) all-purpose flour
Zest of half an orange - 1 tablespoon unsweetened cocoa powder
- 2 teaspoons (8g) baking powder
For the white batter:
- 5 egg whites (medium eggs)
- 1/2 cup (100g) sugar
- 1/4 cup (50g) peanut oil
- 1/4 cup (50g) milk
- 3/4 cup (100g) all-purpose flour
- 1/2 cup (50g) almond flour
- 1/2 teaspoon almond extract
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened cocoa powder
- 2 teaspoons (8g) baking powder
For the pan:
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
How to prepare Giraffe Cake:
Preparing the batters bei sift the flour with the baking powder.
For the yellow batter:
- Put the egg yolks in a bowl, add sugar, and beat with an electric whisk until light and fluffy.
- Add oil and mix, then add the sifted flour with baking powder and stir, being careful not to deflate the mixture.
- Finally, stir in the milk and orange zest. The first mixture is ready.
For the white batter:
- Sift the flour with the baking powder and add the almond flour.
- Put the egg whites in a bowl, add sugar, and beat with an electric whisk until light and fluffy, but not too stiff.
- Add oil and incorporate, add the sifted flour with baking powder and stir, being careful not to deflate the mixture.
- Stir in the milk, vanilla, and almond essence.
- The second mixture is ready.
Layering the Giraffe Cake
- Grease and flour the bundt pan.
- Pour half of the yellow mixture into the pan, trying to cover the bottom well, sprinkle the surface with a tablespoon of bitter cocoa using a sieve.
- Pour in half of the white mixture, distribute not too evenly, and sprinkle the entire surface with a tablespoon of bitter cocoa.
- Repeat the layers, pouring in the yellow mixture, sprinkling with bitter cocoa, and finishing with the white mixture.
- The cake is now ready for baking.
Baking the Giraffe Cake
- Bake the cake in a preheated oven at 180°C for about 40 minutes. Adjust the temperature according to your oven’s performance.
- Check if the cake is done using a toothpick. If necessary, extend the baking time by a few minutes.
- When the Giraffe Cake is ready, remove it from the oven and let it rest for 10 minutes before turning it out onto a serving plate. Allow to cool completely before serving.
