Drunken Chicken Recipe : Tender poultry in a spicy wine sauce

Drunken Chicken Recipe is one of my favorite main meat dishes and one of the easiest chicken recipes out there. It’s not only incredibly delicious but also unbelievably tender. This dish is similar to Chicken Cooked in Wine and can be prepared with either white wine or red wine. This time, I used white wine and a handful of fresh herbs from my garden to make this flavorful Drunken Chicken.

The result? An incredibly aromatic dish where the chicken turns out juicy, tender, and packed with flavor—much like a Chicken Fricassee. And the sauce? Simply fantastic!

Ingredients :

  • 800g (1.75 lbs) chicken (cut into pieces)
  • 1 garlic clove
  • 1 sprig of rosemary
  • Sage
  • Thyme
  • 1 bay leaf
  • 500ml (2 cups) white wine (or red wine)
  • Extra virgin olive oil
  • Salt

How to Make Drunken Chicken Recipe:

  1. You can use a whole chicken cut into pieces, or just chicken wings, thighs, or drumsticks.
  2. Heat 2-3 tablespoons of extra virgin olive oil in a large pan. Sear the chicken pieces over high heat.
  3. Brown the chicken on all sides, then add sage, rosemary, thyme, bay leaf, and garlic clove. Deglaze the pan with a splash of white wine.
  4. Once the wine has evaporated, reduce the heat, add the remaining white wine, cover with a lid, and let the Drunken Chicken cook for about 50 minutes.
  5. Remove the lid and let the chicken cook for an additional 5 minutes to thicken the sauce.
  6. Serve the Drunken Chicken hot, drizzled with the delicious sauce.
