The Cappuccino Bundt Cake is ideal for dunking or eating on its own, as it’s very soft. At home, I usually make pancakes for the girls on Sundays, but personally, I prefer Bundt cake! Ingredients:
- Bundt pan (8 inches / 20 cm diameter)
- 3 medium eggs
- 3/4 cup (150g) sugar
- 1/4 cup (60ml) strong coffee (cooled)
- 1/4 cup (60ml) milk
- 1 teaspoon instant coffee
- 1/3 cup + 1 tablespoon (100ml) vegetable oil (e.g., sunflower oil)
- 2 cups (250g) all-purpose flour
- 1/3 cup (50g) cornstarch (or potato starch)
- 2 teaspoons baking powder
- 1/3 cup (50g) chocolate chips (or chopped chocolate)
How to make Cappuccino Bundt Cake:
- For the Cappuccino Bundt Cake without butter, first brew the coffee, pour it into a cup, add the milk and instant coffee, stir and let cool.
- Place the whole eggs with the sugar in a bowl and beat them with an electric mixer on the highest setting.
- When the eggs are swollen and foamy, add the cappuccino mixture and continue mixing on a higher setting.
- Add the vegetable oil and the sifted flour, cornstarch, and baking powder.
- Mix the Cappuccino Bundt Cake batter with the mixer until creamy and lump-free.
- Pour the batter into the greased and floured Bundt pan. If you want to make the Cappuccino cake even more delicious, you can sprinkle chocolate chips over it.
- Bake the fluffy Cappuccino Bundt Cake in a preheated oven at 350°F (180°C) for about 40 minutes.
- Remove from the oven and let cool completely before removing from the pan.
Tips:
- You can also use decaffeinated coffee.
- If you want a lactose-free cake, you can replace the milk with a plant-based drink.
- You can also add chocolate chips to the batter.
- Always adjust time and temperature to your oven.
