Broccoli-Oatmeal Cutlets are a healthy, tasty, and nutritious dish, perfect for those looking for a light but satisfying alternative to classic meat schnitzels. This dish is ideal for anyone who wants to incorporate more vegetables into their diet without sacrificing taste and crispiness. It’s suitable for vegetarians, those looking to reduce their meat consumption, or anyone seeking a healthier alternative for a nutritious meal. The combination of broccoli and oats also makes these cutlets rich in fiber and protein, ideal for a filling lunch or dinner without being heavy.

Ingredients:

  • 9 oz (250g) broccoli
  • 4.5 oz (120g) light Galbanino cheese, grated
  • 1 oz (30g) grated Parmesan
  • 4 tablespoons oat flour
  • 2 eggs
  • 3 garlic cloves, grated
  • 3 tablespoons breadcrumbs
  • 2 tablespoons sour cream
  • 2 teaspoons ghee (clarified butter)
  • 1 teaspoon paprika powder
  • 1 teaspoon dried garlic
  • 1 red onion, chopped
  • A splash of extra virgin olive oil
  • 1 teaspoon salt
  • ⅓ teaspoon pepper

How to prepare Broccoli-Oatmeal Cutlets:

  1. Prepare the broccoli: First, separate the broccoli florets from the stems and place them in a pot of boiling water. Add half a teaspoon of salt and cook for about 5 minutes with the lid closed until the broccoli is tender. Drain and let cool.
  2. Sauté the onion: Heat the ghee in a non-stick pan and add the chopped red onion. Sauté the onion for a few minutes until golden brown, then turn off the heat.
  3. Prepare the mixture: Once the broccoli has cooled, finely chop it and place it in a bowl. Add the sautéed onion. In another bowl, whisk the eggs with salt, pepper, dried garlic, paprika, and sour cream. Mix well, then add the grated Galbanino, grated Parmesan, and grated garlic cloves. Add everything to the broccoli and mix well.
  4. Make the dough: Add the oat flour and work into a soft but firm dough.
  5. Prepare the breadcrumbs: In a bowl, mix the breadcrumbs, remaining Parmesan cheese, paprika, and dried garlic.
  6. Shape the cutlets: Using an ice cream scoop, take a portion of the mixture and dip it in the breadcrumbs. Shape into small round discs with your hands.
  7. Cook the cutlets: Line a non-stick pan with parchment paper, brush with a little olive oil, and heat. Place the cutlets in the pan and cook for about 5 minutes on each side until golden and crispy.

Broccoli-Oatmeal Cutlets are the ideal choice for anyone looking for a protein and fiber-rich dish without sacrificing taste. They’re perfect for those who eat healthily or are looking for a light alternative to classic meat cutlets. They’re quick and easy to prepare and can be served as a main dish or as a side – a tasty and nutritious option for any occasion.
